A showstopper from Japan’s ancient Kyoto vegetable heritage, Benigoromo meaning “crimson robe”, earns its name with deeply serrated, fiery purple leaves that intensify in colour as temperatures drop. Milder and crispier than its spicier green cousins, it has a subtle mustard flavour and is at its magnificent best raw in salads. A brilliant cut-and-come-again crop.
