Who needs potatoes when you’ve got mangelwurzel? These roasted chips are smoky, garlicky, and outrageously moreish, with crisp edges that are impossible to resist. They’re the kind of side that disappears straight off the tray before you’ve even sat down at the table. A healthier twist on classic chips and a brilliant way to show off this quirky root, once you’ve tried them, you’ll be hooked.Serves 2–3 as a sideIngredients:500g mangelwurzel, peeled and cut into thin chips 2 tbsp olive oil 1 tsp smoked paprika 1 tsp garlic granules Sea salt and pepper to tasteMethod:Preheat oven to 200°C (fan 180°C). Toss the mangelwurzel chips in olive oil, paprika, garlic, salt and pepper. Spread evenly on a baking tray lined with parchment. Roast for 30–35 minutes, turning halfway, until golden and crisp on edges.Serving suggestion:Perfect with homemade burgers or as a healthier alternative to chips with fish.
