Per servingcalories257fat14gsaturates5gcarbs24gsugars8gfibre5gprotein10gsalt5gIngredients4 medium beets 4 medium carrots 3 medium potatoes 1/2 head of cabbage 2 medium onions 4 tbs chopped tomatoes 2 tbs tomato puree 1 garlic clove, crushed 3 tbs vegetable oil water (as needed) herbs of your choice for toppingMethodFirst, prepare all your veggies by peeling and chopping or shredding. Bring half a pot of water to the boil. Add your beets and simmer for 10 minutes before adding your carrots and potatoes and continue to simmer for another 15 minutes (or until tender). Stir in your chopped tomatoes and cabbage. Heat oil in a separate pan on a medium heat and cook the onions and garlic in the oil. Then stir in your tomato paste and add to the other pot. Stir all ingredients together and let it sit on a low heat for five minutes. Turn off the heat and let to sit for two minutes before serving!Chef’s NotesBorscht is a traditional Ukrainian dish.
