Beetroot Brownies

Ingredients

  • 250g cooked beetroot
  • 200g ground almonds
  • 200g dark chocolate
  • 60g coconut oil
  • 70g maple syrup
  • 3tbs cocoa powder
  • 2tsp baking powder
  • sea salt for (the top)

Method

  1. Pre-heat oven to 180c and line your square baking tray with greaseproof paper.
  2. Melt your dark chocolate then stir in the coconut oil until completely dissolved.
  3. In a food processor, blitz all the other ingredients until fully combined.
  4. Pour your chocolate and coconut oil into the rest of the ingredients and fold in until fully combined.
  5. Transfer your mixture into your baking tray and bake for 30 minutes.
  6. Sprinkle your sea salt over the top once its out of the oven and set aside to cool. Enjoy!

These brownies are a perfect way to sneak in some veggies without sacrificing indulgence!
